Buckwheat Pancakes

Vegan, Gluten Free

(Makes 8/10 pancakes)

*Blend all ingredients in a high speed blender/food processor*

Ingredients:

2 cups buckwheat flour (or any other gf flour)
1 tablespoon maca powder
2 tsp baking powder
2 cups unsweetened almond milk
2 tsp vanilla essence
1 mashed banana

Method:

1. Set a non-stick frying pan to medium heat and spray with cooking spray or coconut oil. Pour batter onto the pan, using about ¼ cup of batter for each pancake. Flip when the edges become cooked and bubbles appear on the surface.
2. Serve with favourite toppings – fresh figs, tahini, crushed hazelnuts and drizzled with maple syrup.
